In a pan, add 2 tbsp oil, 2 dry red chilli, 4-6 garlic cloves and sauté for 40-50 seconds. Now, add some chopped onion, tomato, capsicum, and carrot. Sauté them for 4-5 minutes and then season with some salt, black pepper, soy sauce, and vinegar. Mix well and add boiled red rice. Gently mix well and garnish with fresh coriander leaves. Serve hot.
